The Research and Development Technologist coordinates and executes different product development activities for the assigned initiatives in the following categories, as dictated by the company's strategies and in accordance with the established business goals and timelines:
  • Mainstream Bread
  • Buns and Rolls
  • Restaurant & Institutional Bread and rolls
  • Private label Bread, Buns and Rolls
  • Other bakery items
Should be able to work in projects from its initial idea to final launch, including development of innovative products, reformulations, line extensions, productivity projects, and be able to search and test alternate ingredients and suppliers, and contribute in quality improvements projects for the optimization of our product designs.
The candidate will be able to:
  • Design and execute experimentation using established procedures, interpret results and translate results into possible solutions.
  • Contribute to key product improvements, cost reductions, new products development, knowledge building or other technically based objectives within the parameters of time and cost defined.
  • Evaluate new ingredients, materials, products or processes.
  • Describe and demonstrate research results or protocols to colleagues in a professional manner.
  • To work both in a "hands-on" environment and /or direct as needed, ideas and concepts into product reality.
  • Utilize services available - laboratory, finance, packaging, technical services, Marketing, engineering, etc. - ensure that product(s) are followed through to channels for final approval for sale.
  • To advise and guide on scientific/technical matters as necessary.
  • To prepare specifications of new products developed or update current ones, and be able to ensure its proper flow of documentation.
  • To write the tests reports, record data from analyses or experiments in a computer, log book or laboratory notebook.
  • Deal effectively and professionally with outside ingredient suppliers to meet R&D objectives (keeping Purchasing informed).
  • Ensure, at all times, communication with all R&D members of product development team throughout Bimbo Bakeries USA and any other groups related to the projects.
  • Where approved, to travel to all Bimbo Bakeries USA technical facilities and to co-packers facilities and be able to independently and effectively accomplish R&D objectives, and interface professionally with representatives of the same.
We're looking for the following abilities and skills:
The successful candidatemust demonstrate strong interpersonal skills and the ability to influence decisions within the cross functional teams (Marketing, Operations, Quality Systems, Packaging, Procurement) and externally with partners such as ingredient vendors.
  • Strong commitment and support of BBU's values, ethics, goals, and objectives.
  • Bachelor of Science degree with a concentration in Food Science, Bakery Science, Food Process Engineering, or Chemical Engineering
  • Preferred 2 plus years of technical food industry experience, preferrable with Bakery/R&D/Quality areas.Experience in rolls, breads, doughs and other baked goods is also relevant.
  • Formulating and/or troubleshooting experience is desired.
  • Knowledge of the baking process and function of food ingredients.
  • Proven excellent work record with demonstrated high levels of initiative and self-direction.
  • Demonstrated strong problem-solving and critical-thinking skills.
  • Excellent organizational and communication (written and oral) skills.
  • Excellent project management skills with ability to work on several projects at a given time.
  • Computer skills and adaptability to new software/applications.
  • Willing to travel as required.
