Essential Job Duties
We are hiring a cook for NCSU students and faculty for our Forestry and Fisheries, Wildlife and Conservation Biology ( FWCB) summer field intensive courses. The summer field intensive program is an important part of the Forestry and FWCB Curricula and introduces students to many of the concepts and practical field skills, which they will use in later courses and in their professional careers. For many students, the experience is a time of significant personal growth.

The camp is held off campus near Bahama, North Carolina. We provide accommodations that are rustic but fully furnished and include private sleeping quarters, window AC units, full bathroom and meals. Pets are not allowed.

Cook must be flexible with changes in meal times. Additionally, there are days when lunches will be packed and taken off site or breakfasts picked up and delivered to field sites.

Meals will be served as follows: Monday breakfast through Friday lunch.

Breakfast 6:30 a.m. - 7:00 a.m.
Lunch 11:30 a.m. - 12:00 noon
Dinner 5:30 p.m. - 6:00 p.m.

Possible evening snack events - once a week - Grab and go snacks i.e. granola bars, peanut butter & jelly sandwiches, etc. should be available every evening for students except during special snack events.

Requirements and Preferences


Work Schedule This is a two-way, split-shift position. Hours range from 4:30 am until 6:30pm Monday (breakfast) through Friday (lunch). Will not exceed 40 hrs per week.
Other Work/Responsibilities
Kitchen Duties:
1. Meal Planning - Menu plan, order supplies. Provide a varied menu of nutritious home cooking - ability to take into consideration common allergies. A varied meal plan should be created for each week in advance and contain balanced nutrition for busy students. We require a protein source at each meal.
2. Meal prepping and serving meals. Some meals will be packaged "to-go" for field trips. Instructors will communicate in advance for these requests.
3. Plan for weekly guests of the program - faculty and alumni events.
4. Oversee and prepare salad bar daily - a balance of toppings, proteins and vegetarian proteins are required.
5. Oversee kitchen and dining cleanliness - maintenance of industrial cooking equipment.
6. Be the dining contact and person responsible for scheduling and contacting the health department and ensuring everything is up to code.

Cleaning Duties:
1. Supervise students' daily and weekly dishwashing and cleaning chores in the kitchen and mess hall.
2. Oversee and maintain kitchen cleanliness - We have a contracted cleaning service and the Cook's Assistant and Teaching Assistants (TA's) also have a role in support.
Minimum Experience/Education
High school graduate/ GED plus at least two (2 ) years food service experience feeding large groups including short-order and high volume cooking experience.Menu planning for large groups, work with an assistant and TA's to prepare and organize smooth meal times. Able to place large quantity food orders for multiple weeks at a time. Assure and maintain kitchen and dining hall cleanliness standards are exceeded. Calendar management and coordination for meal counts and special needs. Be able to accommodate common food allergies and requests. Communicate via phone and email effectively.
Department Required Skills
Must have knowledge of cooking equipment and advanced knowledge of cooking methods and food safety. Must have a diverse culinary knowledge, be proficient in recipe preparation, and be able to accommodate common food allergies and requests. Must be able to plan meals for large groups, place large quantity food orders for multiple weeks at a time, and work effectively with an assistant and Teaching Assistants. Must be able to meet strict meal times to prepare and organize smooth meal times. Must maintain kitchen and dining hall cleanliness standards. Must be organized with calendar management and coordination for meal counts and be able to communicate via phone and email effectively.
Preferred Years Experience, Skills, Training, Education

  • At least 2 years food service experience in casual dining.
  • Equipment knowledge, advanced knife skills, meat fabrication, and a variety of cuisines knowledge.
  • Measurements and advanced knowledge of cooking methods and food safety.
  • Short-order and high volume cooking experience.
  • Diverse culinary knowledge.
  • Proficient in recipe preparation.
